By now, you may have heard of one of the newest and coolest superfoods in town: Quinoa.

Quinoa is a versatile grain that makes for a complete meal when combined with your favorite proteins and vegetables or fruits. Here’s a quick and easy recipe:



1 cup quinoa (cooked according to package directions)

1 can tuna packed in water

1 cup spinach

½ cup mushrooms (brown button or shiitake)

½ cup broccoli

1 tsp coconut oil or olive oil

2 cloves garlic



  1. Heat garlic in oil.
  2. Place tuna. Add broccoli and mushrooms.
  3. Add the spinach and cooked quinoa.
  4. You may add sea salt and pepper to taste if you wish.
