Ingredients:
1 small red onion, small diced
2 cloves garlic, roughly chopped
½ cup chopped cilantro
1 ½ cups cooked mung bean
½ cup cooked rice
2 tbsp olive oil or vegetable oil
1 tsp cumin powder
1 tsp oregano powder
1 tbsp light soy sauce
1 tbsp lime juice
2 pcs tortilla wraps (8 or 10 inches in size)
2 tbsp water
Salt and pepper to taste

Mango Salsa:
½ ripe mango, medium diced
3 medium-sized tomatoes, diced
½ red onion, medium diced
¼ cup fresh cilantro
1 tbsp lime juice
Salt and pepper to taste

Procedures:

  1. Prepare the mango salsa by mixing all the ingredients in a bowl. Set aside.
  2. In a pan or skillet, sauté onion in oil for 5 minutes, or until the onion is soft. Add the garlic and fresh cilantro, cook for another minute.
  3. Turn the heat into medium-low, add the mung beans and cooked rice, season with cumin powder, oregano powder, soy sauce and lime juice. Stir to combine. Season with a little bit of salt and pepper. Add 2tbsp water. Allow the mung beans to cook until heated through, for about 5 minutes.
  4. To assemble 1 burrito: Add a heaping tablespoon of mango salsa onto the tortilla, top with a cup of the mung bean rice mixture. Fold in the opposite sides of each tortilla, tightly roll into a bundle. Repeat with remaining ingredients to prepare 2 burritos.
  5. In a warm pan, place each rolled burritos seam side down first, and toast each side until brown.
  6. Serve immediately with mango salsa, garlic mayo, or dip of choice.
