This version uses avocado which is full of healthy fat and fiber. Unsweetened cocoa powder lends a rich chocolate taste without added fat. Makes about 1/2 cup, good for 1 or 2 servings
INGREDIENTS
3/4 cup chopped ripe avocado (about 1 medium piece)
1 tbsp powdered stevia or 1/3 cup coconut sugar
Pinch of salt
1/4 cup unsweetened cocoa powder
Optional toppings, such as chopped nuts and fruit
- Place the avocado in a mini food processor or blender and blend until smooth, stopping often to scrape the sides.
- Add the stevia and salt and blend again.
- Add the cocoa powder in 3 or 4 batches, blending in between to make sure it’s well incorporated.
- Refrigerate the pudding until ready to use. Scoop or pipe into a small bowl, ramekin, or cup; garnish with toppings and serve.
