Running out of breakfast ideas? Start your day with these three different kinds of toasts that will surely kick off a bright day! Try out a heart and satisfying Chickpea “Tuna” Spread toast, a Tomato Bruschetta-Style Toast topped with fresh tomatoes and basil, or a Peanut Butter and Jelly Toast if you’re craving for something sweet.

Chickpea “Tuna” Spread Toast (Makes 1)
113 g cooked chickpeas (from 1 small can)
1 tbsp yellow or dijon mustard
1 tbsp maple syrup or other liquid sweetener
Handful of fresh dill or parsley, finely chopped
Pinch of salt and pepper, to taste
1 tbsp vegan mayonnaise, optional for extra creaminess
1 large slice of bread, toasted

Procedures:
Place the chickpeas in a medium sized bowl. Mash with a fork and then add in the mustard, sweetener, fresh herbs, and salt and pepper to taste. Mix well and feel free to adjust to your desired taste. If using vegan mayonnaise. Mix that as well. You can prepare this chicken “tuna” spread the day before and simply refrigerate until ready to use.

Add the spread over the toasted bread and enjoy!


Tomato Bruschetta-Style Toast (Makes 1)
3 small tomatoes, seeded and diced
12 fresh basil leaves, chopped
Generous drizzle of olive oil
Salt and pepper to taste
1 large slice of bread

Procedures:
Mix together the tomatoes, basil, and olive oil in a small bowl. Season with salt and pepper to taste. You can prepare this the day before and simply refrigerate until ready to use.

Top the tomato mix on your toast. Enjoy!
 

Peanut Butter and Jelly Toast (Makes 1)
1 large slice of bread
1 tbsp peanut butter
1 tbsp strawberry jam or jam of your choice
Sliced banana, for topping
Pumpkin Seeds, for topping

Procedures:
Toast your bread. Spread the peanut butter and jam on top. Add some sliced banana and pumpkin seeds, if desired. Enjoy!
