Chocolate Avocado Mousse

This dessert will satisfy your sweet tooth while packing a nutritious punch. Avocados are known for their high levels of healthy fats, vitamins, and minerals, making them an excellent addition to this standard sweet.

Here is a decadent dessert you can have on a weekday and not feel guilty about. Chocolate mousse is usually made with heavy cream, egg yolks, and white sugar - a recipe for health disaster. This version uses avocado which is full of healthy fat and fiber. Unsweetened cocoa powder lends a rich chocolate taste without added fat. This dessert is sweetened with stevia, a zero-calorie natural sweetener made from the stevia plant. Enjoy it with fruit and nuts and feel good about eating dessert!

 

Makes about 1/2 cup, good for 1 or 2 servings

 

INGREDIENTS

3/4 cup chopped ripe avocado (about 1 medium piece)

1 tbsp powdered stevia or 1/3 cup coconut sugar

Pinch of salt

1/4 cup unsweetened cocoa powder

Optional toppings, such as chopped nuts and fruit

  1. Place the avocado in a mini food processor or blender and blend until smooth, stopping often to scrape the sides.
  2. Add the stevia and salt and blend again.
  3. Add the cocoa powder in 3 or 4 batches, blending in between to make sure it’s well incorporated.
  4. Refrigerate the pudding until ready to use. Scoop or pipe into a small bowl, ramekin, or cup; garnish with toppings and serve.
