Fresh Fruit and Chia Parfait

Bursting with vibrant colors and a variety of fresh fruits, this parfait is not only visually appealing but also packed with essential vitamins and minerals. The addition of chia seeds adds a boost of protein, fiber, and omega-3 fatty acids.

Chia seeds are a superfood that feeds the brain and the energy. But what can you do with it? Apart from sprinkling it into oatmeal or blending it in smoothies, turning it into a pudding and layering it with fruit makes for a perfect dessert-like breakfast.

 

Makes about 5 parfaits

 

For the chia pudding:

Makes 1 1/2 cups

1/4 chia seeds

1 1/2 cups soy milk,

almond milk, or coconut milk

Stevia or coconut sugar to taste, optional

  1. Mix everything in a bowl and place in the refrigerator for at least 1 hour or overnight, until a thick pudding is formed.
  2. Break up the chia bits with a fork and mash well so the chia is evenly mixed through. Keeps in the refrigerator for a few days.

 

 

To assemble:

1 to 1 1/2 cups diced or sliced assorted fruit, such as:

mangoes, pineapples, bananas, berries, melon, etc.

 

Assemble parfaits in 1/2 cup or 1/3 cup-sized glasses like so:

1 tablespoon fruit

1 1/2 to 2 tablespoons chia pudding

1 tablespoon fruit

1 1/2 to 2 tablespoons chia pudding
