Breakfast Papaya Boats

This breakfast papaya boat recipe creates a vibrant and refreshing dish that's palatable for kids and adults while packing in a bunch of health benefits.

Ingredients:

2 cups rolled oats

1 cup soymilk or low-fat milk

1 cup coconut milk

¼ cup honey

1/8 tsp ground cinnamon

2 small ripe papayas, halved and seeds removed

1 banana, sliced into rounds

4 tsp chia seeds

4 tsp cacao nibs or chopped dark chocolate

4 tsp desiccated coconut

4 tsp goji berries or raisins

 

Procedure:

  1. In a bowl, combine the oats, soymilk, coconut milk, honey and ground cinnamon. Mix well.
  2. Cover the bowl with plastic wrap and allow the oats to soak overnight in the refrigerator.
  3. The following day, assemble the papaya boats by filling the hollowed papaya halves with the overnight oats mixture.
  4. Top with banana slices, chia seeds, cacao nibs, desiccated coconut and goji berries. Serve immediately.
